Ingredients: - 1 kg chicken pieces (skinless, bone-in or boneless, as per preference) - 2 onions, finely chopped - 3 tomatoes, finely chopped - 3 cloves of garlic, minced - 1-inch piece of ginger, grated - 2 green chilies, slit (adjust according to spice preference) - 1 teaspoon cumin seeds - 1 teaspoon coriander powder - 1/2 teaspoon turmeric powder - 1 teaspoon red chili powder (adjust to taste) - 1/2 teaspoon garam masala powder - Salt to taste - 2 tablespoons cooking oil - Fresh coriander leaves for garnish
Instructions: 1. Clean the chicken pieces thoroughly and pat them dry with a paper towel. If using bone-in chicken, you can cut them into smaller pieces if desired. 2. Heat oil in a large pan or kadhai over medium heat. Add the cumin seeds and let them splutter. 3. Add the chopped onions and sauté until they turn golden brown. 4. Add the minced garlic, grated ginger, and slit green chilies. Sauté for a couple of minutes until the raw smell disappears. 5. Add the chopped tomatoes and cook until they turn soft and mushy, stirring occasionally. 6. Once the tomatoes are cooked, add the dry spices - coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes until the oil starts to separate from the masala. 7. Add the chicken pieces to the masala and mix until they are well coated with the spice mixture. Cook for 5-7 minutes, stirring occasionally, allowing the chicken to seal. 8. Pour in about 1 cup of water (adjust according to desired gravy consistency), cover the pan, and let the chicken simmer over low heat until it is tender and fully cooked. This usually takes around 20-25 minutes, but cooking time may vary depending on the size and type of chicken pieces used. 9. Once the chicken is cooked through, sprinkle garam masala powder over the curry and mix well. Cook for an additional 2-3 minutes. 10. Garnish with freshly chopped coriander leaves. 11. Serve hot with steamed rice, naan, or roti.
Feel free to adjust the spices according to your taste preferences. You can also add other ingredients like yogurt, coconut milk, or cream for variations in flavor and texture. Enjoy your homemade chicken curry!
